Nuts: Instead of walnuts, you could try pecans, almonds, or even pistachios for a different crunch and flavor profile.
Cheese: If goat cheese isn’t your thing, you could try cream cheese, ricotta, or even a blue cheese for a bolder flavor.

Different Bread: While I love the classic baguette, you could also use ciabatta or any other crusty bread you have on hand.
How to Make Goat Cheese Crostinis
Step #1: Preheat an oven to 350 degrees Fahrenheit (175°C).
Step #2: Slice the baguette into ½ inch slices and arrange on a baking sheet. Use a pastry brush to lightly coat both sides of each piece with olive oil. Sprinkle the tops with salt.

Step #3: Arrange the walnuts in a single layer on a second baking sheet.

Step #4: Once the oven is pre-heated, place the baguette slices and walnuts in the oven on separate racks.
Step #5: Allow the walnuts to toast for 5-7 minutes, checking every minute or so, until golden brown and fragrant. Be careful not to burn them!
Step #6: Remove the baguette slices after 15-20 minutes, or when crisped and golden. If your oven has hot spots you may want to rotate the baguette pan halfway through the baking time.
Step #7: Allow the crostini to rest until cool to the touch. Spread a thin layer of goat cheese over the top of each crostini, then top with walnuts and a drizzle of honey.

Step #8: Finally, serve warm and enjoy!

Any type of honey will work, but I personally love using a good quality, local honey because it has a richer flavor.
Toasting the walnuts enhances their flavor and adds a nice crunch, but if you’re in a hurry, you can skip this step. They’ll still add a nice texture and flavor to the crostini.
