Summer is in full swing, and I’m embracing every sun-soaked moment! I’ve decided to throw a casual patio party this weekend, taking full advantage of the gorgeous weather and good company.

One of my favorite ways to impress guests is with delightful, refreshing drinks, and my latest obsession is this Strawberry Rhubarb Cocktail. I love blended drinks, but sometimes being the party host can be overwhelming, and it’s nice to have a self-service punch made up and available to guests. Alright, enough chit-chat for now. Time to make a few more of these cocktails!

Reasons to Love this Strawberry Cocktail

  • The Strawberry Rhubarb Cocktail recipe perfectly balances sweet strawberries with tart rhubarb.
  • This Strawberry Rhubarb Cocktail is an ideal thirst-quencher for hot summer days, offering a cool and invigorating sip.
  • This cocktail uses fresh fruits, providing a healthier and more natural option compared to many store-bought alternatives found in grocery stores.

Recipe Ingredients

Fresh rhubarb stalks and strawberries laid out on a wooden table.
  • Rum: Smooth and light, this rum adds subtle warmth and depth to the cocktail.
  • Fresh Rhubarb: Tart and crisp, rhubarb adds a sharp tang that balances the sweetness and refreshing edge.
  • Frozen Strawberry Daiquiri Mix: Sweet and fruity, this mix provides a concentrated strawberry flavor.

Variations

  • Lime Citrus Kick: Swap lemon juice with fresh lime juice. Lime offers a comparable tangy brightness.
  • Gin Substitute: Replace Bacardi Superior Rum with gin for subtle botanical notes.
  • Use Cane Sugar: Replace the ¼ cup sugar with cane sugar to add a subtle, richer sweetness.

How to Make Strawberry Rhubarb Cocktail

Step #1: Simmer the chopped rhubarb, sugar, and lemon juice in a saucepan over medium heat until the fruit is tender and the sugar dissolves, about 5 minutes.

Step #2: Transfer the cooked rhubarb to the bowl of a blender and process until smooth. Allow to cool.

Step #3: Add the BACARDI® Mixers, rum, and ice to the blender. Blend on high until smooth.

Step #4: Divide the cocktails into six serving glasses. Garnish with lemon wheels and strawberries, if desired.

Expert Tips

  • Strain for Smoothness: Strain the rhubarb mixture through a fine mesh strainer using a wooden spoon for a smooth, silky texture.
  • Avoid Over-Blending: To keep your cocktail’s perfect slushy texture, blend in short bursts and check the consistency frequently. Stop blending as soon as the mixture is smooth to avoid it becoming too watery.
