Remember how I couldn’t stop talking about my obsession with Greek food? Like that quick 10-Minute Mediterranean Chickpea Salad or the 20-Minute Mediterranean Chicken Pita Sandwich? Well, I’m back with another delicious Greek dish.

Why I Love These Kabobs

  • Fun and easy to serve, these skewers impress guests with minimal effort.
  • They pair wonderfully with a range of sides— salads, rice, or grilled vegetables.
  • Kabobs are ideal for casual gatherings or BBQs, but just as enjoyable for a simple weeknight dinner.

Recipe Ingredients

Chicken Kabobs served with salad, fresh tomatoes, and a side of lemon dipping sauce.

Vegetables – While I stick to just the chicken for this recipe, feel free to add veggies if you want. They’ll grill up tender and add extra flavor.

Spice Blend – A mix of paprika, cumin, and coriander with salt and pepper gives the kabobs a rich, Mediterranean flavor.

For a full list of ingredients and amounts, see the recipe card below.

Variations

Chicken Thighs – Swap boneless skinless chicken breasts with chicken thighs for a juicier bite. They may need a few extra minutes to cook.

Fresh Herbs – Fresh oregano, parsley, or cilantro brighten the dish. Add them to the dipping sauce for a fresh kick.

How to Make Mediterranean Chicken Kabobs

Step #1: Thread the chicken pieces onto metal skewers.* Combine all of the spices in a small bowl, then spread evenly onto a flat surface. Roll the skewers in the spice mixture until evenly coated.

Step #2: Heat a grill pan over medium-high heat. Spray the pan with olive oil, then cook the skewers for 2 minutes per side, 8 minutes total, or until the chicken is cooked through.

Step #3: Whisk the dressing ingredients together in a small bowl. Serve the skewers with a side of dipping sauce.

Expert Tips

Preheat the Grill Pan – Make sure the grill pan is preheated properly before adding the kabobs. This helps with even cooking and beautiful sear marks.

Don’t Overcrowd the Skewers – Leave small gaps between pieces for even heat circulation.

FAQs

What are the best sides to serve with my Mediterranean Chicken Kebabs?

Pair them with warm pita bread, tzatziki sauce, Greek salad, roasted veggies, couscous, or rice pilaf for a complete meal.

Can I add vegetables to my easy grilled chicken kabobs?

Absolutely! Bell peppers, zucchini, cherry tomatoes, or red onions make great additions. Just be sure to cut them to a similar size as the chicken for even cooking.

Storage Information

To store your Chicken Kabob leftovers, place them in an airtight container, or wrap them tightly in foil, and refrigerate for up to 3 days. For longer storage, freeze the cooked skewers in a freezer-safe container or wrapped in foil for up to 2 months.

To reheat, thaw overnight in the fridge if frozen, then warm in a grill pan or microwave until heated through. For best results, avoid overcooking during reheating to keep the chicken tender.

  1. Lemons and garlic.sounds interesting. I will have to try the dressing out. Thanks

  2. Tried this today for lunch. Great spice combo. Used the dipping sauce as my salad dressing since I ate the chicken over red leaf lettuce. Added some grape tomatoes in there for color. Yum!!
