As with most baked goods, I had it in my head that shortbread was difficult to make. I have no idea where I got this idea, as it only takes four ingredients and one hour to make these Holiday Shortbread Cookies!

Recipe Ingredients

Variations

  • Sugar Variations: For Sparkling Shortbread Cookies, consider various sugar types based on your preferences. Cane sugar provides a subtle molasses flavor and fine texture. Coarse sugar adds a crunchy sparkle, while brown sugar, rich in molasses, gives a moist, caramel-like flavor.
  • All-Purpose Flour for Pastry Flour: Use all-purpose flour as a substitute for fine pastry flour, yielding a slightly denser but similar-tasting cookie.
  • Add Vanilla Extract: A teaspoon of vanilla extract can infuse the cookies with a warm, aromatic flavor, complementing the buttery taste and enhancing the overall richness of the cookie.
  • Butter Variation: Consider using Kerrygold or another European-style butter. These butters are known for their higher butterfat content, which contributes to a richer flavor and a more luxurious texture in the cookies.

How to Make Sparkling Shortbread Cookies

Step #1: In a large mixing bowl, cream together the butter and sugar until well-combined. Sprinkle the salt over the butter. Slowly add in the flour, about ½ cup at a time, while mixing to incorporate it into the butter.

Step #2: Form the cookie dough into a large ball, wrap it in plastic wrap, and refrigerate for 10 minutes, until chilled.

Step #3: Preheat your oven to 325 degrees Fahrenheit (163 degrees Celsius).

Step #4: On a lightly floured surface, roll the chilled dough out to a thickness of 1/4″. Then, cut the dough into cookies and transfer them to an ungreased baking sheet. Sprinkle with sparkling sugar.

Step #5: Finally, bake for 20-25 minutes until golden brown.

Expert Tips

  • Well-Floured Rolling Conditions: To prevent the dough from sticking when rolling it out, ensure your surface, hands, and rolling pin are well-floured. Additionally, using a silicone mat or parchment paper on your work surface can further minimize sticking, making the rolling and cutting process smoother and cleaner.
  • Keeping Countertops Cool: If your kitchen is warm, chill a metal sheet pan in the freezer and use it on the countertop to keep the surface cool. This helps prevent the butter in the dough from melting.
  • Alternative to Cookie Cutters: If you don’t have cookie cutters, use a small bowl, a drinking glass, or a mason jar lid. Also, you can simply cut the dough into traditional rectangles.
  • Re-chill Dough if Necessary: If the dough becomes warm during rolling and cutting, especially if it takes a bit longer, place the raw cookies in the fridge for a few minutes to re-chill the dough. This helps them retain their shape during baking.
  • Refrigerate the Dough Before Rolling: Chilling the dough before rolling makes it easier to handle and prevents spreading in the oven.
