Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
In a medium bowl whisk together the flour, salt and baking soda and set aside.
In a bowl of the stand mixer or using an electric handheld mixer, beat together the butter, brown sugar, and granulated sugar until fluffy.
Next, add the egg and vanilla and mix.
Then add in the lime zest and half of the flour mixture to the bowl and mix until combined.
Add the remainder of the flour mixture and mix until fully combined and dough forms.
Next, using a 1-inch cookie scoop, scoop the dough onto your prepared baking sheets and bake for 8-10 minutes. Note these cookies will be light in color.
While the cookies are baking and cooling, prepare the lime glaze by whisking together all the glaze ingredients until smooth. Adjust liquid or confectioner’s sugar as needed but note that you want a thicker glaze.
Then, once the cookies have cooled completely, pour the glaze into a zip top bag, cut one corner and drizzle over each cookie. Then sprinkle fresh lime zest over the top.
Finally, serve and enjoy!

You can store any leftovers of these Key Lime Cookies in an airtight container at room temperature for 5-6 days. They will last in your fridge for 7-10 days.To freeze you can store the cookies or cookie dough balls in an airtight container in your freezer for up to 2 months. I would recommend freezing without the glaze on top.
