These Key Lime Cookies capture the essence of tropical flavors in every bite, featuring a soft and chewy texture with a creamy and tangy frosting on top. The cookies have a classic sugar cookie flavor with a hint of lime but the real key lime flavoring is in the frosting. Add as little or as much as you want for the perfect Key Lime cookie!

Recipe Ingredients

Lime Zest – For that classic key lime flavor that is added into the cookies, frosting, and garnish on top of the cookies.

Lime Juice – Key lime juice is added into the frosting to pack a punch into the frosting to make a creamy and citrusy flavor.

How to Make Key Lime Cookies

Step #1: Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.

Step #2: In a medium bowl whisk together the flour, salt and baking soda and set aside.

Step #3: In a large bowl of the stand mixer or using an electric mixer, cream together the butter, brown sugar, and granulated sugar until fluffy.

Step #4: Next, add the egg and 1 teaspoon vanilla extract and mix.

Step #5: Then add in the key lime zest and half of the dry ingredients to the bowl and mix until combined.

Step #6: Add the remainder of the flour mixture and mix until fully combined and dough forms.

Step #7: Next, using a 1-inch cookie scoop, scoop the dough onto your prepared baking sheets and bake for 8-10 minutes. Note these cookies will be light in color.

Step #8: While the cookies are baking and cooling, prepare the lime glaze by whisking together the confectioner’s sugar, tablespoon of lime juice, milk, vanilla, and lime zest until smooth. Adjust liquid or powdered sugar to reach your desired consistency but note that you will want a thicker glaze so it doesn’t run off.

Step #9: Then, once the cookies have cooled completely on the baking sheet or a wire rack, pour the key lime glaze into a zip top bag, cut one corner and drizzle over each cookie. Then sprinkle fresh lime zest over the top.

Step #10: Finally, serve and enjoy!

Can I use regular limes instead of key limes in this key lime cookies recipe?

Yes! Either lime you choose will give you that zesty taste!

What other additions can I add into these Key Lime Cookies?

If you are wanting to spice up your cookies I would recommend adding in ½ cup of white chocolate chips. You can also top with lemon zest as well as lime zest to add in more citrus flavors to these cookies.

Storage Information

You can store any leftovers of these Key Lime Cookies in an airtight container at room temperature for 5-6 days. They will last in your fridge for 7-10 days.

To freeze you can store the cookies or cookie dough balls in an airtight container in your freezer for up to 2 months. I would recommend freezing without the glaze on top.

Ingredients

For the Cookies

  • 1/2 cup butter - softened
  • 1 egg

  • 1 Tbsp milk
